POPPY SEED CHICKEN
4-6 chicken breasts, cooked and shredded (or cubed)
1 large container sour cream
1 large can Cream of Chicken ( or Mushroom) Soup
2 Packages Ritz crackers (crushed up semi-fine)
2 Tablespoons + Poppy Seeds
1 1/2 - 2 sticks butter, melted (not margarine)
Heat oven to 350 degrees F. Combine 1st three ingredients. Set aside. Combine last three ingredients. Save 1/4 cup of cracker crumbs mixture and press the leftovers into the bottom of a 9x13 pan. Spoon chicken mixture over cracker mixture and smooth out. Sprinkle remaining 1/4 cup cracker mixture on top. Bake uncovered 30 minutes or until bubbly.
